The Pecner company's colouring caramels are made by controlling the action
of heat on sugar without the use of a catalyser or any other additive.
They are made solely from sucrose (white sugar beet, raw cane sugar and
refind cane sugar).
The
Pecner company's caramels are made in the traditional artisanal
manner. All the production stages are carried out by hand - the
human element is of paramount importance.
The savoir-faire of the artisan is crucial as he alone can
judge the characteristics of the caramel as it is being made. He
is the guarantor of a perfect quality product.
As part of its range, the Pecner company has a particularly stable caramel
colouring especially for strong spirits (80% proof), and also an atomised
caramel for use with spray-on products.
Each batch produced is analysed at Pecner before being shipped. A
shipment may consist of a few kilos or even several tonnes. Each year,
the Pecner company produces over 350 tonnes of caramel colouring.
