
Oak chip infusions (or boisés) are used to provide complementary
tannins to products which are aged in casks or barrels. They are made
solely from French oak from the renowned Limousin and Allier regions.
In accordance with current legislation, they are perfectly natural and
contain no artificial preservatives.
The infusions are made by macerating oak chips in water which is brought
to boiling point.
Evaporation is carefully controlled to obtain the desired concentration.
The oak which is used is carefully matched to the oak selected to make
the barrels in which cognac is aged.

The oak chip concentrate which is produced without alcohol, for using
directly after distillation with eaux-de-vie which will take on little
tannin. |

The oak chip water complement, with no alcohol, for using with aged
cognac to bring down its level of alcohol - just as water is used
- but with the advantage of providing oaky qualities. It is incorporated
immediately. |
